I lock the portafilter into the group head. The coffee is dry, compressed, and almost completely hidden.
Before a single drop reaches the cup, I have already begun reading it.
I start at two bar for about four seconds, just long enough for water to enter the coffee bed without allowing liquid to fall. Then I return the pressure to zero and wait, usually for around eight seconds.
Nothing visible happens.
The preparation of the espresso is taking place where I cannot see it.
Before the First Drop
In pour-over coffee, the bloom is open in front of me. I can watch the bed rise, release gas, take in water, and slowly settle. If one part remains dry, I can see it. The aroma tells me how the coffee is changing within that visible movement.
Inside an espresso basket, almost all of that is hidden.
The water enters under low pressure, but the basket prevents me from seeing how it moves through the bed. When the pressure returns to zero, no coffee falls into the cup. From the outside, those seconds can look like an empty pause.
They are not empty.
Before the water enters, a faint dry aroma escapes from beneath the portafilter. Once the bed becomes wet, that aroma begins to change. It grows warmer, fuller, and more closely joined. The coffee is still held inside the basket, but its condition is already reaching me through the small opening below.
This is how I read the espresso bloom.
The eight seconds are not a rule. Sometimes the bed is ready sooner. Sometimes it needs longer. Bean age changes it. The roast changes it. Even the way the coffee has ground and settled that day can change it.
Six seconds, eight seconds, ten seconds: these numbers record how long the bed needed. They do not decide it.
I wait until the aroma tells me that the water has reached the coffee evenly enough for the next pressure to begin.
Then the first drop gathers beneath the basket.
It stretches, releases, and falls.
What had been hidden begins to cross into the cup.
Three Heights
Once the espresso begins to flow, I can smell it at three different heights.
The first is beneath the portafilter, close to the coffee bed.
The second is in the line of liquid passing through the air.
The third rises from the cup.
They belong to the same extraction, but they do not belong to the same moment.
The aroma beneath the portafilter is closest to what is still inside the bed. The liquid line carries what is leaving at that instant. The cup holds everything that has already arrived.
At first, the three move together.
The bed continues to open. The liquid line becomes fuller. The cup gathers sweetness, texture, and aroma. What I smell above is still becoming what I smell below.
For a while, the extraction feels continuous from one height to the next.
Then a distance begins to appear.
The cup may still smell complete because it contains everything good that has already fallen into it. Its sweetness does not disappear the moment the extraction begins to weaken.
The liquid line changes sooner. Its aroma may become thinner, quieter, or less clearly connected to the main flavour already forming in the cup.
Beneath the portafilter, the movement can be clearer still. What remains inside the bed is beginning to differ from what has already left it.
The three heights no longer say the same thing.
That difference is not a flaw in the extraction. It is the information I need to finish it.
The Moment to Stop
I do not wait for the cup itself to become unpleasant.
By then, I have already gone too far.
The moment to stop arrives while the cup is still whole.
Sometimes the warning is bitterness or astringency beginning to move forward. In another coffee, nothing harsh appears. The liquid line simply loses the floral note, sweetness, weight, or clarity that gave the cup its centre.
There is no single flavour that marks the end of every espresso.
The end is the point after which the next drop no longer belongs to the cup I am trying to make.
By then, the cup may still be beautiful. It is holding everything that came before. But the liquid line is no longer adding to it in the same way, and the aroma beneath the portafilter tells me that what remains should stay where it is.
So I stop the water.
The final stage of my pressure profile has no fixed duration. The machine can hold the pressure, but it cannot decide when the coffee has finished speaking.
That decision moves with the bean, the roast, the period of rest, the grind, and the way the bed has formed.
Even two shots from the same coffee do not always end at exactly the same second.
The number changes.
The moment I am looking for does not.
I stop when the cup has received what it needs, before the next part begins to pull it away from itself.
What the Scale Cannot Tell Me
This is why I do not let liquid weight decide when an espresso is finished.
I am not against measurement. I weigh the dry dose to one decimal place, close to the weight of a single bean. A scale can tell me exactly how much espresso has entered the cup, and it answers that question with greater precision than I ever could.
But weight and completion are not the same thing.
The scale tells me how much has arrived.
It cannot tell me what is arriving now.
It cannot compare the aroma still held beneath the portafilter with the line passing through the air and the cup already gathered below. It cannot tell me whether the next gram will deepen the cup or begin to loosen the line that holds it together.
For that, I need the coffee itself.
In front of the roaster, I follow aroma because it tells me what is happening inside the drum in the present moment. At the espresso machine, I rely on the same sense for the same reason.
The equipment changes. The way I listen does not.
At the Cherry Lab bar, the finished cup is all that remains.
The coffee bed is out of sight. The liquid line has vanished. The moment of stopping has already passed.
Between the bed and the cup, the espresso has already been decided.
