Roasted after you order
We roast each coffee only after an order is placed.
Small batches, to order
Green coffee is prepared in small batches, and roasting is completed within three business days of purchase. Once roasted, the coffee is shipped the same day. This keeps it fresh, and lets us respond to the character of each lot.
Whole beans only
To keep quality stable in transit, every coffee is shipped as whole beans. Grinding just before brewing gives the clearest expression of aroma and flavour.
On consistency
Our goal is not uniformity, but the faithful expression of each coffee at its best. Small variations are not flaws: they show that the coffee was handled with attention rather than automation.
Green bean weight and roast loss
The weights on this site are green (unroasted) weights. Moisture evaporates during roasting, so the roasted coffee weighs less. As a general reference:

Roasting is not a mechanical repetition. The roaster adjusts the heat to the aroma, the sound, the colour, and to how the coffee itself behaves. So the final weight may vary slightly between batches, even for the same coffee.
Shipping
Japan: ¥1,000 (tax included) for orders under ¥5,000; free from ¥5,000.
International: a flat ¥2,500 per package.
