A latte at Cherry Lab often looks ordinary. This is not an unfinished latte. It is the finished form I want.

Before a single drop reaches the cup, I have already begun reading it. The scale tells me how much has arrived. It cannot tell me what is arriving now.

I can give you the full pressure profile for one of my espressos. The numbers are exact. They are also no longer entirely true.
